Carrot Cheesy Meatloaf with Brown Sugar Glaze

I’m going to tell it to you straight, I’ve been a vegetarian the past few years but when my blood results came back to tell me that I was alert level low iron deficient, that quickly changed. Thankfully I know where to get the highest quality meat and it’s right here at Sage Mountain Farm!

Sage Mountain Beef provides a very good source of protein and vitamin B12 and a good source of selenium, zinc, iron, phosphorus and other B vitamins without the concern for pesticide, hormone and antibiotic residues. Pasture grasses and other forages are the most natural foods for cows and other ruminant animals. From a health standpoint, there’s no question that cows do better on these natural foods than on grain-based feeds. Too much grain-feeding can cause excess formation of gas in the digestive tract of the cow and pose serious health risks. When cows are given the opportunity to follow a diet composed of their natural foodstuffs, they are much healthier. Not surprisingly, the meat they provide as food is much healthier as well. Sage Mountain Beef  has less total fat than grain-fed beef, and greater amounts of omega-3 fatty acids and CLA (Conjugated Linoleic Acid).

I’ve been experimenting with new ways to prepare my farm fresh, green & grass-fed goods, and for my birthday this year, my friend came over and prepared this home-style meatloaf for me! And wow, what a treat! Savory, flavorful and rich! Just the right kind of birthday dinner, and when paired with fresh organic salad greens and organic farm potatoes, this meal is a hearty, healthy delight that doesn’t skimp on decadent!

Carrot Cheesy Meatloaf Recipe

Ingredients:

Loaf:

  • 1 Pound Grass-fed Sage Mountain Ground Beef Chuck (our ground beef always comes with ground chuck mixed in)
  • 1/2 cup shredded Organic Carrots
  • 1/2 cup Organic Onion
  • 1/2 cup Organic Green Pepper
  • 1 Farm Fresh Egg
  • 1/2 cup Grass-fed Raw Cheddar Cheese (I love & use Organic Pastures)
  • 1 cup Fresh Bread Crumbs (I used Rye bread)

Brown Sugar Glaze:

  • 1/3 cup ketchup
  • 3 tablespoons brown sugar
  • 1 tablespoon yellow mustard

Directions:

Hand shave carrot & cheddar cheese.

Dice Onion & Green Pepper

Break the bread into small pieces

Mix shaved carrot, cheese, onion, green pepper, and ground beef together in a bowl. Then Add 1 scrambled egg and hand mix

Put mixture into a loaf pan

Mix Glaze Topping ingredients in saucepan and stir on medium heat

Add warm glaze over loaf

Bake in preheated oven at 375• for 45 mins.

Toss together a salad made with our farm fresh organic greens, and mash together some of our farm fresh organic potatoes, and this hearty, healthy meal is fit for a king, queen and all your little prince and princesses!
