The advantages of having access to organic produce from local farms go way beyond nutrition and taste. One huge advantage is variety. Organic farmers are constantly experimenting with food varieties in order to determine which grow best in their particular soils and climates.
It is not uncommon to see something at a Farmers Market, or in your CSA box that you've never seen before.
We encourage all cooks everywhere to have a sense of adventure. To learn how to cook with local, seasonal ingredients, and if you're not familiar with a certain ingredient, become familiar with it.
